Chef Marco Sacco's Carbonara Pasta at the Lotte Hotel is a dish that will haunt me for no other iterations will ever match up. The noodles are slightly dry yet adente with a dried Prosciutto and milk crisp. The egg béchamel was light and frothy like a cappuccino yet airy like meringue. It was a perfect course. Delight.
