Breakfast today was rice with seaweed soup, raw sea squirt and a spring vegetable I haven’t had before. It is called Bangpung(방풍). It is a spring herb that only comes out in spring. It has a herbaceous flavor that is a bit like tarragon. It has an almost overwhelming green flavor. It was simply blanched and mixed with some vinegared chili sauce and garlic. It goes well with raw seafood like sea squirt.
It is a unique vegetable. I wouldn’t enjoy it everyday but it is good when you lack greens in your life.
I guess after a long winter having vegetables was a special treat.
