Fatherly Advice

We are getting ready for our baby girl. It is our destiny. Some fatherly advice I got was: 1. Sometimes you have to throw away clothes that get ruined (onesies are disposable).  2. People will offer help like to watch the baby or make dinner, be prepared to accept it.  3. The fortress of solitude will disappear when you have a child.  4. TV shows are ok but get ones without commercials and watch shows you also enjoy.  5. What you plan to do with your child may not turn out the way you think.  6. All men, regardless of how macho, will all have to wear tutus, play dress up and be princesses. 

The Rising Costs of a Hot Seoul Area: Haebangchon

Holy Cow has haebangchon changed. I lived here for about 6 years and it is soooo different now. It used to just have dive bars and some small eateries but now it has much more. Had a talk with one of the owners of Phillies and he gave me a run down. To take over a place, payments are around 200,000,000 won. This is in addition to building deposit.  Rents are around 3-4 million won a month. Yikes. To start, a basic restaurant here it looks like you would need about 350 million won (314,000 usd). I should have bought a place around here back in the day. I think I could have started a bar here about 6 years ago for about 50 million won (45,000 usd) with a rent of about 1,000,000 won (900 usd). I kinda thought this area was going to pop back then but my life went in another direction. Oh, well.   #haebangchon #cafe #seouleats #picstitch

Here is a little about the dish and my recommendations for the best places in Seoul. Dan Galbijjim Galbijjim has become one of those ubiquitous dishes that show up everywhere. The appearance of this at an event signified that this was truly a special occasion. It must have something to do with the slowly braised ribs in a seasoned soy/sesame marinade. One of the reason it is special is the rare and expensive ingredients: beef ribs. The second reason is the time it takes to make this dish. To make them very good, it could take a whole day for you have to soak the meat in water to pull out the blood and then season them, finally, you have to slowly braise them. Homemade Cheesecake

I made a cheese cake in my oven yesterday for the first time in years. I did it without a mixer so I had made it and because I didn't have vanilla extract I used some maple syrup. I cooked in a water bath. Other than the top being a bit brown, the cheesecake was delicious. I hope my wife will like it. 

Amazing Kimchi Omori Kimchi Ramen from GS25

Omori Kimchi Chiggae Ramen Omori Kimchi Chiggae Ramen I love kimchi and I still think the best kimchi chiggae is from Omori Kimchi. I mean they make the kimchi chiggae from 3-year-old kimchi. The kimchi in it makes the stew taste like the Thai soup Tom Yam Gom. I was happy to find that they have made a ramen line using this miraculously pungent and acidic kimchi. So when you open up the packet you get a packet of the kimchi and a flavor packet. The noodles are thin, but I got the instant boil in container so the noodles are always thinner in that. After you add the mix and the hot water, you get a great bowl of kimchi stew. I mean, really super good. It is the best broth that I have had in instant ramen. I mean the broth was so good that I drank it all. The noodles in the ramen were just there as a vehicle for flavor. If you are looking for some amazing ramen, then this is it.
