Lamb Skewers with Magical Powder at Shim Yang

DJ Koo: Co-owner of Shim Yang Shim Yang in Apgujeong Lamb Skewers I love lamb. I think it is an excellent animal with the right amount of texture, flavor, and the flesh sears perfectly over coals. I think I was a Greek in a past life because the thought of lamb makes my mouth water and my stomach empty. Young lamb is always best, but mutton in a heavy curry isn't bad either. One of my new favorite restaurants in Apgujeong is Shim Yang because they do lamb skewers. Here cubes of young lamb (1 year or younger) are put on metal skewers and seasoned with a mix of fine chili powder, sesame seeds, and anise. The dipping powder is a mix of exotic, spicy, and savory and accents the clean, non-gamey taste of the lamb. They will even give you a whole head of garlic so you can skewer it and grill it up as well. The place has a Chinese flair to it and you can get Chinese beers like Tsingtao or liquors. I'm wondering if you can tell me where in Seoul we can purchase a WHOLE lamb or young goat. We're trying to do a barbecue, but having a hard time finding where to go. We're new to Korea. Thanks - Colleen B. Well Colleen, the best place to get lamb is up by the mosque in Itaewon. Go out exit 4 of Itaewon Subway Station. Walk until you see a Dunkin Donuts. At that corner make a right and go to the top of the hill. You'll pass a bookstore called "What The Book." Make a left and keep walking for about 400 meters. You'll see a Halal butcher and here you can get a whole lamb. I hope that helps. Dan

Cooking: Russian Roast Lamb

I'm going to take a stab at cooking Russian Food today. Yesterday I was out with Sara and Jennifer Flinn aka Fatmanseoul and we went to an awesome Uzbekistan Restaurant over by Dongdaemun. It was awesome and I was so inspired that I decided to buy a whole bunch of ingredients and try to replicate some of what I ate yesterday. I got a shoulder of mutton and some brown bread and today I'm going to make a lamb roast. I figure, I'll start it early and then do some work and it'll be finished and read to eat by tonight. Right now, I'm trying to figure out how I should flavor the meat.
