Seoul Eats Mailbag: Restaurant Recommendations, H Makgeolli, and Questions

Hey everyone, as you know, I try to answer all letters that I receive. I figure if someone sends a letter it usually means that there are 5 other people with the same question. So here we go: Hi Dan, Mark has returned to NYC and is enjoying working at Lugo Caffe as we speak. I am here for a few more weeks with some family coming in just a few days. I was hoping you could give me a few recommendations:-) I am dying to have some sushi before I leave with a few friends. Do you know of an affordable and delicious sushi restaurant? Also, I want to take my family out for Korean BBQ. I have been to Sam Won Garden and loved it but think it might be expensive.(I didn't pay:-) What do you think? Thanks so much!! Hope things are going well! Terra My response: Dear Terra, I hope you're having a good time and I wish you could have come on the food tour with us on Saturday. If your friends are around for a while, we could arrange something for your group. I've got a cou...

How to buy cuts of beef or pork in Korea?

This is a question I often get from readers and I wanted to repost it.  It's best to find a local butcher. You'll find them around in each neighborhood, but it really depends on the kind of meat that you would want and the cut. You would go to the chicken guy to get chicken. Most of the fish you can get fairly fresh at a market or you can go to noryrangjin: the fish market. For pork and beef, you'll find a separate shop and it's just important you know what cut you are looking for. Here's a list of cuts of beef and they are applicable to pork as well. 갈비 Short Rib/Plate 갈비본살 Boneless Chuck Short Rib 갈비심 Rib Eye Roll 곱창 Small Intestine 긴 혀 Tongue Long Cut 꼬리 Ox Tail 꾸리살(전각살) Chuck Tender 대창 Large Intestine 도가니 Leg Cartiledge 뒷사태 Hind Shank 등갈비 Back Rib 목갈비 Chuck Short Rib 목심 Chuck Roll 보섭살 Rump Round 볼살 Cheek Meat 부채살(서대살) Top Blade(Flat Iron) 뼈사태 Bone-in Shin Shank 사분도체 Quarter 사태 Shin Shank 살치살 Chuck Flap 설깃 Outside Round 설도상 Top Sirloin Butt 설도하(도가니살) Knuckle 소...

The MEAT post or Where to get your big ole pile of meat in Seoul

So, I'm a weekly guest on The Steve Hatherly Show on TBSeFM radio and my corner is all about food. I'm on every Saturday at 4:30pm on 101.3efm. Now Steve is a big kid and there are certain things that he just doesn't like talking about. First of all, he doesn't like desserts and he doesn't like vegetables. Last week I brought up vegetarian food and food for hot weather and he just whined through the whole segment. He whined just like he did here: Honestly, I think his 4 main food groups are Cigarettes, Meat, Alcohol, and Whine. So this week, I've decided to give him what he wants and I'm listing all the places where you can get lots of protein. 1. Santorini in Itaewon. You can get a whole pile of meat for like 60,000 and it's enough to feed 4 people. You get lamb, chicken, pork, and other mystery tidbits that are all chargrilled and sprinkled with oregano. The Greeks were manly people. They were so manly in fact that they could have manly boyfriends and ...

U.S. Beef! The shopping bag Korea doesn't want YOU to see

My friend Paula asked for a paper shopping bag at the Lotte Mart because she wanted to help the environment. The mart wouldn't give her one because they couldn't find where they were (even though by law, they are supposed to give customers the option of paper or plastic.) Anyway, they couldn't find the paper bag, but they gave her something even better. If you look closely it says, "U.S. Meat Export Federation." On the back it says, "Beef" Haha. Oh, Korea. I "Heart" you. Dan

Korean style ribs in Nowon

If you go out exit 2 of Nowon and make a left and down the alley you'll find this amazing Rib's place. No, it's not galbi. What you'll get is ribs right on the bone because that's where all the flavor is. This is my new favorite Korean meal because it appeals to the caveman inside me. I don't think there is anything better than to sit around a glowing charcoal pit while gnawing on meat off the bone. What makes this place stand out is the sauce. They make this amazing smokey tasting BBQ sauce that has some soy sauce, honey, pepper, vinegar, and magic. It's a simple sauce. Its clean taste waltzes with the charcoaled pork flavor. Yummmm.... I can't tell you the name of the place or the number. Just wander around Nowon until you find it. It's around exit 2. Dan
