Creamy Peanut Butter-esque Kongguksu at Jindo Jip

Kongguksu at Jindo Jip Kongguksu is a summer time dish that is made from ground soybeans and noodles. The chilled, thick soybean broth has noodles and it is a great dish for those that are vegetarian and for those looking for a light meal to beat the summer heat. My search for the best Kongguksu House took me to Yeouiddo where they serve their bowl of noodles for 9,500 won a bowl- almost double that any other place would dare to charge.  Very expensive, chilled noodle soup? I was was intrigued. The setting is nothing special. The only distinctive thing about the atmosphere is that it is big and busy. They have a very sparse menu- only noodle dishes. You can get chicken noodle soup, spicy mixed noodles, mandu, and a variety of rice cake soup.  I mean this place even charges extra for extra noodles and for broth! I couldn't believe it since Myeongdong Gyoza charges  almost 8,000 for a bowl of their noodles, but they give complementary refills on noodles and ...

Korean Food Story: Korean Spring Greens!

Boseong Green Tea Fields Korea Now that spring is right around the corner, I thought I would talk to you all about bom namul or Korean Spring Greens. These are greens are very seasonal and only last for a few weeks out of the year. You know how some times you just crave something fresh like a vegetable or fruit and you just eat a whole plate of them? I think that’s how many Koreans feel when winter is finishing. There is just something necessary in the spring greens that their body is telling them they just need to eat. In spring, when my Korean mother and I go for a mountain hike, for her it is a shopping excursion. She always has a basket to take with her because she’ll pick certain leaves and vegetables and then she’ll make a spring greens bibimbap. The vegetables that she picks are fresh shoots and leaves for if they are old, they taste bitter. My mother told me that the spring greens have a lot of panax, you know the same stuff in ginseng, so...

Alien's Day Out Bake Shop I was lucky enough to meet up with Mipa Lee of Alien's Day Out today at my cooking school.   She and my friend Lilian came over to discuss a bake sale that we are planning on having soon for charity. I have had Mipa's desserts before  and they were delish so I was happy to hear about her bakeshop. Since I hang out at Balwoo Gongyang Kong all the time (I think you have noticed. Nothing funny is going on. I have become good friends with many of the staff there and I go there to hang out with the monks^^), I decided to order a mix of different vegan treats so that my monk friends can try some of Mipa's fine desserts. I placed the order today for an order of Chocolate Orange Biscotti, Pumpkin Bread, Thin Mints and...I think Snickerdoodles. I am so excited and I can't wait till they are delivered. Lunch at Balwoo Gongyang Kong Redux

If not, you can find it here:  Balwoo Kong: Budget Vegan Temple Cuisine Review: 2 Stars I was a bit critical on service during my last visit. I am happy to announce that changes have been made and everything is much more efficient now. Wow. They have the little button things that'll ring when your food is ready and service is much nicer. The waitress was nice enough to bring me a complementary tea during my last visit. The food is delicious as usual and I have been back twice since my review. It is quickly becoming one of my regular haunts.

Many Thanks for Korea's Mountain Vegetable Cuisine

Sanchae Salad from Nwijo I ventured to Seoraksan National Park this weekend to feast my eyes on the highly anticipated foliage. Although clearly in the advent stages of the season, the showcase of the color spectrum was worthwhile. Alongside the accustomed greenery, vivid ambers, oranges and chocolate browns began to emerge throughout the scenery. Besides the mountains, I also saw plenty of color in my food pickings. Seoraksan is a mountainous area that houses a famous sanchae bibimbop, a tasty spin of the mixed rice treat. Sanchae bibimbop in many ways is the twin of dolsot bibimbop. Both dishes features rice, fried egg and heavy dollops of red pepper paste. The difference between these two dishes, however, is quite notable. Sanchae bibimbop is known for its large servings of leafy and root vegetables that are found in Korea's own mountainous landscape. The overall taste is much fresher than that of some bibimbop varieties, and sanchae may even be (gasp) tastier.

Loving Hut: Vegan restaurant

Hmmmm...I'm in the mood for something Vegan. I think I should check out this restaurant that my friend Chalica wrote about. Here is her take on it. Vegetarian in Seoul Presents: The Loving Hut by Chalica Pack As a vegetarian living in Korea, I have been pretty lucky thus far finding restaurants that serve non-meat dishes alongside their meat-based staples. . I've only had to walk out of one restaurant (Who knew the Turkish weren't vegetarian friendly?) after finding nothing more than a paltry side salad as my vegetarian option. Last week, I visited my first all-vegetarian restaurant in Korea. The Loving Hut is a (fairly) new vegan chain restaurant that has locations all over the world. Vegging Out in Seoul: SM restaurant by Courtney Crook

SM restaurant in Yangjae is like a vegan/vegetarian oasis in Seoul. The atmosphere is surprisingly calm and pleasant. The outside is offset by an outside sitting area and patio that is adorned with various plants and flowers. The part-time staff is friendly and welcoming.The lunch service costs 13,000 won. Lunch runs from 12-2:30 and dinner is from 6-9. Both services are usually quite lively. Local monks are usually regulars customers there as well, no doubt drawn by the incredible all-you-can-eat buffet. The buffet features a variety of faux meat dishes such as the smoky vegetarian bulgogi and spicy mixed mushrooms with vegetarian "ham". The best pretender of all is definitely the meatless tangsuyuk- fried vegetarian pork with a sweet and sour glaze. Also on the buffet were delicious tofu and vegetable side dishes. Come for the Serene Interior. There is a cool shop at this restaurant as well. You will get table full of side dishes. Sanchon. What can I say about it that hasn't already been said by Zenkimchi and Fatman Seoul ? It's good. It's delicious. I love the atmosphere. The Seoul Veggie Club Recommends

By Kenneth Holman Osegyehyang Buffet is a relatively new vegetarian restaurant located just outside exit 1 of Achasan station (line 5). There is also an Osegyehyang in Insadong, but it is not a buffet. It is operated by members of a religious group that runs several other restaurants in Korea and throughout the world, including SM Ching Hai Buffet near Yangje station. It is like the buffet from SM Ching Hai plus several menu items from Osegyehyang plus much more. If you have not been to any vegetarian restaurants in Korea, it's not a bad place to start because there is a large variety of food to select from. The buffet is huge. The menu on their website lists 37 hot dishes, 27 cold dishes, 29 salad items, 24 desert items, and 7 special items. Some of my favorites are fried mandu, scorched rice with mushroom sauce, mushroom roll with hot sauce and fried soy protein with sweet and sour sauce. I was doing a little research and I came across the Daily Kimchi's review of this vegetarian restaurant near Sinsa Station. Does anyone know if it still exists? Cooking Korean Food with Maangchi: Dak Kang Jung

Dak kang jung from Maangchi on Vimeo . I love this woman. She makes very accessible Korean food and she takes it to the masses. Here's her recipe for Dak Kang Jung: a sweet crispy chicken dish. Prepare 40 chicken wings or chunks of chicken, rinse them off in cold water and drain them. Transfer the chicken into a big bowl. Add 2 ts of salt, 1 ts of ground pepper, 2 eggs, and the mixture of ½ cup of flour and ½ cup of starch powder. Mix it by hand. Deep fry the chicken wings in vegetable oil 2 times at about 350-380 degrees (F). Sauce for coating: Prepare a big wok or pan. Place 1 cup of water in the wok and heat it up. Slice 1 cup of ginger thinly after peeling the skin off and washing, and add it into the boiling water. Add 2 TBS of soy sauce, 1 cup of brown sugar, ¼ cup of vinegar and boil it over medium heat. 5 minutes after, add 1 cup of corn syrup and keep boiling over low medium heat about 30 minutes. Broccoli may help protect lungs

Sulforapane is found in broccoli and brussel sprout A substance found in broccoli may limit the damage which leads to serious lung disease, research suggests. Chronic obstructive pulmonary disease (COPD) is often caused by smoking and kills about 30,000 UK residents a year. US scientists found that sulforapane increases the activity of the NRF2 gene in human lung cells which protects cells from damage caused by toxins. The same broccoli compound was recently found to be protective against damage to blood vessels caused by diabetes.
