Korean Fried Chicken

Image
There is a debate right now about Korean fried chicken. One group thinks it can be considered Korean food. The other group thinks that it is just western food. What do think about this? I believe that Korean fried chicken should be promoted as a Korean food because it is Korea's unique food culture, which led to the development of its unique taste and texture. The sauce, dips, style of eating, and side dishes also make this uniquely Korean. Chicken in the past was considered a boyang (endurance) food that was often eaten during the three hottest days of summer. Korea was mainly a farming country and when you work all day in the fields, you need protein to stay healthy. The problem is that in summer cattle needed to work the fields and the meat would quickly spoil. Smaller animals would be eaten instead such as eel, duck or chicken. But for the Korean palate, eel and duck are too greasy so many preferred the taste of chicken. The problem is that the lean chicken

Korea Mania Chicken in Sinchon

Image
Spring Onion Chicken at Korean Mania Chicken.  Fried Chicken and Beer is a magical combination that I think all people can agree with. The crisp, greasy chicken is washed down with the sparkling bitter slosh of brew. Now a stronger microbrew probably would be too strong for the crisp, light taste of Korean chicken, but the light Korean beers are a great pairing. A week ago, I went to Shinchon for a good-bye party for a couple of my friends. For the first round we went to Korean Mania Chicken. This is another chicken franchise located in Korea like BBQ, Kyochon, Hotsun, and TwoTwo. The thing about Korean Mania is that they are at a lower pricepoint than most of the other restaurants (You can get an order of chicken for 10,000) and I think they have very crisp chicken with a light batter. Friends A close up of the spring onion chicken with tangy sauce. We started out with the Spring Onion Chicken (파닭). This was boneless chicken- mainly skin- that is fried and served with green onio

The Frypan: Fried Chicken and Beer = Good

Image
I love the Frypan. I love the style of the restaurant, the crisp chicken that is well seasoned and the freshly grilled potato chips they serve the chicken on. The only think I don't like is that I can't get pitchers of beer and it is a tad expensive. The chicken is crisp and well seasoned- like awesome KFC before the colonel sold out and added MSG to his secret original recipe. The chicken is also crisp and the breading is more southern than the crackling Korean style chicken you often fine. It's good chicken. the Frypan: Fried Chicken and Beer the Frypan: Fried Chicken and Beer: Cool Style, but when I was in there they were ready for Christmas the Frypan: Fried Chicken and Beer's Fleet of Chips topped with Crisp Chicken But I'll tell you what, it's a place that I love to go to because often its like the 3rd round or something and you don't want to have a lot of food, but since you have to order food with your drinks in Korea, shouldn't you

Hyejin's Double Fried Korean Chicken

Image
Hyejin's DD Fried Chicken Hyejin DD Fried Chicken Hyejin's DD Fried Chicken I am lucky to work with a group of very talented chefs that work diligently. Chef Hyejin has been working with us for over a year and I have seen her grow as a person, chef, and teacher in that time. She has an incredible arsenal of techniques and the keen attention to detail that transform food from into an experience. One of our first students, Joseph, has been taking classes with us for one year because he is planning on opening a fried chicken restaurant in his homeland. His family owns a chicken farm there and fell in love with the way Koreans do chicken. Hyejin has developed many recipes and sauces for Joseph and we think we are nearing chicken perfection.  In the pictures you can see the different types of chicken she has come up with. We learned the best way to add crackle to the chicken is to dredge the chicken in a mix of flour and corn starch and then let it sit for at leas

#Shiwonhada: Intensely Refreshing Korean Foods

#Shiwonhada: Intensely Refreshing Korean Foods In summer, the word that you need to know in Korea is Shiwonhada. But, you can’t just say the word, you have to precede it by saying, “Ahhhhh…” Say it with me, “Ahhhh…Shiwonhada.” Shiwonhada in Korea means cool and it is often said after experiencing a great shift in temperature such as experiencing a cool breeze after a run or after working hard all day and for dinner you have an ice-cold soup. Shiwonhada can also be said after having a shot of soju after a stressful day or the first sip of a bubbling hot soup that awakens your senses. Its a word that expresses an emotional sense of refreshment. Korea has many dishes that convey this idea of intense refreshment. Here is a list of 7 of my favorite chilled dishes. Note: I am leaving naengmyeon off this list since I and others have written about it so often. This is a list of more unique and unusual cold Korean dishes. 7. Cucumber Chilled Soup (Oi Naengchae 오이냉채) This chilled cucumb

On August 2013, I opened up a small little pizza place in Insadong  and it somehow survived. I even made a little money with it. Then on December 31, 2014 with my saved money and some of my wife's we opened up Brew 3.15 Craft Beer and Fried Chicken House. This one has been a challenge. We had to completely redo the place because the previous tenants really let it go for 10 years. We wanted to restore to a Korean-style house but that was a challenge. We had to deal with electric and other issues, plus the previous tenants built the place out beyond what it was zoned for. The neighbors complained and fought us every step of the way because of noise, parking, zoning, trash, dust...sigh...everything they possibly could. It was like they didn't want us there. Well...it was obvious they really didn't. Anyway, at the end, we made a restaurant and we did a couple soft openings but we are now really ready to give it go. We have a chef that has been perfecting his fried c

Restaurant Recommendations for the G20 Summit

Image
G20 Seoul Summit 2010 The G20 Global Summit puts Seoul on the world stage. Now even though each country's delegates are all coming her for a specific purpose, there is one thing that unites them all: they all have to eat. Here is a list of of some of my recommendations for people if they would like to eat their way around Seoul. Recommended Korean Restaurants in Seoul This restaurant list has general directions and phone numbers because addresses are hard to find in Seoul. It is often best to ask people where the restaurant is (Rest-au-rant O-diseyo?), have a guide call the place, or call the place to help you.   This is a common thing in Korea so don’t feel embarrassed.   If you are taking a taxi call the place and point to this: 이 번호로 전화하고 여기로 가주세요. (Ee bon-ho-ro chonhwa-hago yogi-ro kajuseyo.) The hot regions for dining depend on the region, the history, and the economics of each area. To the Northwest of Seoul, you can find Hongdae, which has Korea’s most famous Art’s Univers
