Hyejin's Double Fried Korean Chicken

Hyejin's DD Fried Chicken Hyejin DD Fried Chicken Hyejin's DD Fried Chicken I am lucky to work with a group of very talented chefs that work diligently. Chef Hyejin has been working with us for over a year and I have seen her grow as a person, chef, and teacher in that time. She has an incredible arsenal of techniques and the keen attention to detail that transform food from into an experience. One of our first students, Joseph, has been taking classes with us for one year because he is planning on opening a fried chicken restaurant in his homeland. His family owns a chicken farm there and fell in love with the way Koreans do chicken. Hyejin has developed many recipes and sauces for Joseph and we think we are nearing chicken perfection.  In the pictures you can see the different types of chicken she has come up with. We learned the best way to add crackle to the chicken is to dredge the chicken in a mix of flour and corn starch and then let it sit for at leas...

Question from a Reader: Homemade Red Bean for Patbingsu

Hmmm...I thought that the red bean always came in cans. But apparently it comes from beans. Now does anyone know how to make it? Here is the question from one of my readers: Dear Daniel, My name's Eugene Rhee and I'm currently living in Seoul. I came across your O'ngofood site and was wondering if you could recommend any classes that specialize in Korean desserts? Specifically I'm really wanting to learn how to make the red bean concoction that's used for patbingsu. I'm not a fan of the canned stuff. I know it's pretty specific and random, but if anyone has a lead I figured it'd be you and your team up there. Thanks ahead of time if you can hook me up with any leads. Have a good one! Korean Cooking in Australia

The reason that Jia and I decided to start a culinary school and a culinary tourism company was that we wanted to share Korean food and culture with others so they would in turn share what they learned from others. One of our students at our school, Kim Forge was one of our earliest students and she took all of our cooking classes and tour offerings. This multitalented teacher is a professional curler and a cooking instructor in Australia. She recently sent pictures of her teaching her Australian High School students how to make Korean seafood pancake and turnip salad. It looks like they had a great time. Kim thank you so much for sharing Korean food with others. Here is what Kim said: Hi Daniel, It’s  Kim  Forge from Australia emailing (I am using my work email this time). I want to thank you for sending me more resources on Korean cooking for my Food Studies students. I have meant to email you for some time, but have left it until now. My year 10 students loved making t...

Couples Faceoff in our Intermediate BBQ Cooking Class!

My buddy Susanna and her lover, Sugan, are a wonderful couple- except for one thing: they are ultra competitive. So competitive in fact, that when they signed up for our Intermediate BBQ cooking class, I was a bit worried. I didn't know if this class might get a bit too heated (pun intended).  They were perfect students during the lesson part of the class, but when it came time to cook, they were very focused, words were exchanged, and there were a few elbows thrown.  In the end, they made an array of well presented side-dishes and bbq meat dishes. They had asked me who won the competition. I told them it was a tie. They wouldn't take that as an answer, so I was asked to critic honestly.  You'll have to ask Susanna and Sugan what I said. If you are interested in signing up for Korean cooking classes, contact us at www.ongofood.com or e-mail at ongofood at ongofood dot com Cheers, Dan
